Bone broth has been trending in the health world for the past few years and it sounds like Bone Kettle is offering an Asian gourmet twist on the broth based soup. Pasadena is already filled with healthfully inspired food trends, including poke and kale bowls and bone broth seems to be joining the crowd. In NYC, bone broth takeaway counters have had New Yorkers wandering the streets while sipping the healthful brews, but it sounds like Bone Kettle will be more of a stay to enjoy establishment.
In the alternative health and wellness community, bone broth has been revered as a sort of miracle cure-all. For those with digestive issues, bone broth is thought to heal leaky gut. Bone broth is different from stock because bones are boiled all the way down and the resulting collagen is thought to strengthen bones and joints. The same collagen is also thought to help restore collagen loss in the skin, making it plumper and appear younger. Glycine in bone broth is also thought to help people sleep better and feel better, while improving memory and cognitive function. With all the healing powers it is somewhat surprising that bone broth hasn’t already hit the health-focused dining scene already around town, but Bone Kettle looks to be changing all that.
Chef Erwin Tjahyadi is heading the charge in bringing bone broth to our fair city. Bone Kettle fuses the healing power of bone broth with a taste of Southeast Asia. If you’re not in the mood for broth, Bone Kettle will also offer a selection of Indonesian inspired small plates and desserts to round out the experience. The weather has finally cooled off enough that some broth sounds like a healing experience for the holiday season. The bright flavors offer something to look forward to, in between bouts of eating your own body weight in comfort foods.
Bone Kettle is set to open this winter, with Eater reporting the opening date as November 28.
