Los Angeles may not have a lot of haute dining with dress codes, but it does have an amazing selection of ethnic cuisines from all over the world. And nowhere is that more true than in Pasadena. Despite being only a mid-sized city, Pasadena tends to get a lot of the best restaurants early on in the trend, like the recent variety of poke places that have opened. The latest food trend to arrive in our fair city is ramen—the delicious Japanese noodles that many are most familiar with from their poor post-college years. Store your store-bought ramen packages for a natural disaster and get ready to enjoy the real deal at Tatsunoya, the latest ramen joint to open in Pasadena.
Slated to go into the former Bella’s Gourmet Pizza spot on Fair Oaks, Tatsunoya is set to open for business on December 18, although some reports seem to indicate that there will be a delay as the noodle shop waits to receive key ingredients being shipped from Japan. Eater explains that Tatsunoya is actually a ramen noodle brand name, noted for its tonkotsu-style ramen. Tatsunoya already has plenty of fans in the surrounding San Gabriel Valley area as their booth at the Ramen Yochoko festival at Santa Anita tends to have really long lines. In Japan, there are several locations of Tatsunoya and the brand has also attracted attention from doing pop ups at events at Mitsuwa in Torrance.
Although it may not sound appealing to American palates, the secret to the rich broth that makes Tatsunoya so delicious is simmering pig-head bones in water for 20 hours.
Tatsunoya isn’t the only ramen game in town, but its tonkotsu-style ramen have drawn praise from L.A. area chefs that have tasted the creation at other events.
Eater also speculates that the shop will offer late hours, which is perfect due its location surrounded by bars and the movie theaters and a welcome alternative for when you don’t want another late-night taco. It’s also nice timing for an opening as the cold weather finally begins to settle in for the winter and a bowl of delicious broth is perfect for warming up.
