The Northern Italian/Californian 50-seat market driven eatery is opening next to Pop Champagne Bar on E. Union Street. The restaurant will serve dinner first, with lunch and breakfast service planned down the road, along with domestic and international beer and wine chosen by sommelier George Pitsironis. Kalman took time off from his gig at The Churchill to start his own artisan pickle line and he will be serving his praised pickles alongside other rustic dishes said to include: Ricotta Crostini with Pickled Onions and Pancetta; Orecchiette with “Head and Shoulder” Pork Ragu and Gremolata; and Spring Lamb with Grist & Tool Grains, Romesco and Pickled Green Garlic.
Like other past ventures, Kalman focuses on a nose to tail approach with pork and other available offerings will be a charcuterie plate. Pastas are also made in house and other focuses include local grains, heirloom beans and seasonal market produce that will be showcased in everything from starters to desserts.
To finish up a meal, Pistachio torte, honeycomb gelato and panacotta with balsamic-pickled strawberries are said to be on the menu.
For his latest venture, Kalman is partnering with Marie Petulla, who has worked in restaurant operations at Stout Burgers & Beer, She in Chicago and the Best Restaurant Group (Firefly, Studio City).
